Daar is min dinge wat ek so geniet soos kosmaak. Dit is regtig terapeties. Ek is baie lief om te eksperimenteer met kos, geniet dit nie so baie om rigiede aanwysings te volg nie.

Wanneer jy eendag vir jou calamari wil maak probeer die een.

Deep fry calamari

Instead of calamari rings, you use the steaks, slice into thin strips (about 15 mm)
Rinse with water then submerge in soda water for about an hour - put it on a paper towel or two to dry off
Cover it with flour, flavour the flour to your own taste

Heat up the oil - high (the oil must be extremely hot) make sure you don't burn yourself

Put in the calamari (small portions at a time), fry for 30 to 40 seconds

Serve with rice, lemon and tartar sauce and enjoy

The soda water does not make it any tastier or anything but helps to clean it thoroughly.

The most calamari steaks that you buy are machine tenderised and I've found that little bits of skin gets into the little holes. Solution, dump it in soda water and let the bubbles in the soda water help you to get rid of all the little unwanted pieces.


And when you are back in SA I will tell you how to braai the best lamb rib ever.
