Wow, that is a sortof bizarly archaic poetic phrase.

The words mean:
solank = as long as
die = the
son = sun
my = my
wete =thoughs/consciousness
buig =bend
sal =will
ek = I
verstaan = understand
van = of/about
my =my
min = love (probably)

Nobody uses "min" to mean love/one I love. It does show up in the word "minnaar" which is a sort of old fashioned word for lover. That's why I say the phrase seems archaic.

So, all together, I'd say it means something along the lines of:

"As long as the sun bends/sways my thoughts, I will understand my love" (as in the one I love)

The other meaning of the word "min" is little, as in "not a lot", so I'm pretty sure it doesn't mean that!
